Title: Island Sweet Potato Pudding

12ozCooked sweet potatoes; peeled and cut in chunks
1mdRipe banana; mashed
3tsBrown sugar; firmly packed
2tbReduced calorie margarine; +
2tsReduced calorie margarine
1/4tsGround nutmeg;
1tsRum extract;
1 Egg white;

Preheat oven to 350. In a large bowl, beat all ingredients except egg white until smooth. Add a small amount of water if necessary, to get a smooth consistency. Beat egg white until stiff. Fold gently into sweet potato mixture. Spoon into a casserole that has been sprayed with a nonstick cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.
